Ayurvedic Ribeye – Warming, Soft, and Deeply Nourishing

A perfect grounding meal for the Vata season, this Ayurvedic winter ribeye recipe warms the body from within, supports digestion, and brings balance during the cold, dry months of autumn and winter. With healing spices and naturally comforting vegetables, it creates a wholesome and satisfying winter dish.

Ingredients (Serves 2–3)

  • 400–500 g ribeye (beef)

  • 1 teaspoon salt

  • 1 tablespoon olive oil or pure ghee

  • 1 small onion, finely chopped

  • 1 carrot, diced

  • 1 sweet potato, diced

  • 1 teaspoon Daily Wellbeing Vata Spice Blend
    (a natural mix of cumin, black pepper, ginger, nutmeg, cardamom, fenugreek, mustard seeds, and Himalayan salt)

  • 200 ml water or bone broth

  • ¼ teaspoon cinnamon

  • Fresh cilantro leaves (for serving)

Preparation

1. Prepare the meat

Bring the ribeye to room temperature and season with salt and black pepper.

2. Sear the beef

Heat the olive oil or ghee in a pan and sear the meat for 2–3 minutes on each side. Remove and set aside.

3. Build the flavor base

In the same pan, sauté the onion for about 2 minutes until softened.

4. Activate the spices

5. Add the vegetables

Stir in the carrot and sweet potato, cooking for another 3–4 minutes.

6. Slow cook

Return the ribeye to the pan, pour in water or bone broth, cover, and cook gently over low heat for 15–20 minutes.

7. Final touch

Add the cinnamon, mix well, and cook for an additional 2 minutes.

8. Serve

Finish with fresh cilantro and serve warm.
